8 Things I’m Loving At The Moment
1. WHERE I LIVE
At the risk of sounding like I’m on the payroll for Coolum tourism, I really do live in one of the most beautiful places on Earth. The weather has been absolutely amazing lately, and thankfully I’ve been able to get out and about more than usual. I’ve been going for long walks from my house down to the beach, sitting outside in the sun each morning, and really just making most of the amazing healing environment I am so blessed to have. If you have no idea where Coolum is, it’s on the Sunshine Coast about an hour north of Brisbane and about 20 minutes south of Noosa. If you’re ever in Queensland, I definitely recommend coming here for a visit.

3. QUINOA
So simple. So tasty. So filling. Quinoa really is one of the best culinary inventions ever. I made this easy dish the other night as a side to our usual Gerson meal, but it could easily be a meal on it’s own.
What you’ll need:
1 cup quinoa
½ cup fresh basil
½ cup fresh coriander (aka cilantro)
1 clove garlic
2 tsp turmeric
What to do:
1. Rinse quinoa and the add to a pot with about 2 cups of water.
2. Bring to the boil, and then reduce to simmer for about 15-20 minutes. All water should be soaked up, but you don’t want the quinoa to turn too mushy.
3. Add garlic and turmeric towards the end and stir through.
4. Turn off the heat and add chopped herbs.
5. Serve with a drizzle of olive oil (or flaxseed oil once it’s cool).

5. CLAY FACE MASKS
One of my readers, Dani Angel (how cool is that name!), sent me some of her holistic skin care products last week and I really want to tell you about them. 6. FANCY SALAD
I may have completed my two years of “official” Gerson Therapy, but a whopping big plate of salad twice a day is still a massive priority for me. This is one we had the other day. It had in it:
Cos lettuce
Baby spinach
Cherry tomatoes
Green capsicum
Snow peas
Red cabbage
Carrot
Radish
Red onion
Zucchini (made into noodles with the Spirooli)
I added chickpeas, flaxseed oil and apple cider vinegar after I put it on my plate.
7. B-SCHOOL
You know how I told you that I did Marie Forleo’s B-School last year? Well, this program did so much for my business (which was really just a hobby then) that I am doing the course again this year to take things to even greater levels. I’m really interested to find out more about the Vegan card – I think it’s a fabulous idea. I have a couple of chronic and sometimes dibilitating medical conditions and I find living this lifestyle makes such a difference to the way I life my daily life. If I stray, I feel it big time.

The most positive change I’ve noticed in my body since changing to a plant based diet a few years back (I’m now vegetarian), is that I have been able to reduce my asthma medication by 50%! I’ve been on asthma medication my entire life, so naturally this was a big deal. Now I am working towards being inhaler free!

After being vegetarian for a really long time, I finally went plant based because I was starting to develop arthritis in my fingers and knees. After 1 month I no longer had any joint pain and now after 3 months I very rarely get any joint stiffness. Now if I could just master meditation rather than drinking white wine (vegan of course) to de-stress…
Ome of the best positives ive noticed from going on a plant based diet is reduced insulin requirements. I’m always going to need insulin, but the less I need the better!

I have been a vegetarian for nearly 10 years now but have only recently became a raw vegan. Since being on a plant-based diet I have noticed huge differences including, elevated moods, less bloating, clearer skin and generally just feel great!

Loving your posts Jess. I have been vegetarian for 15 years and four months ago I started leaning in to the Vegan way of life and absolutely loving it. Juicing everyday, preparing raw vegie salads and experimenting with delicious recipes by making everything from scratch. My body has thanked me for it, and never have I eliminated so well. That’s the nicest way I could put that, haha! I now have so much energy and the cranky me has gone
