Recipe Of The Week: Quinoa + Veg (Easiest, Healthiest and Tastiest Dinner Ever)
I remember the nights when I would get home from work at 8pm after a long day of sitting at my desk writing about Zac Efron and the Gossip Girl cast, and were so exhausted that the thought of preparing dinner seemed about as fun as being married to Homer Simpson (fun to watch, but poor Marge). If my boyfriend hadn’t kindly made dinner for me, I would resort to whatever meal was plastic wrapped in the freezer, of just have avocado on toast. With a bit of tomato and onion, if I had the energy. If only I knew then what I know now. Satisfying, healthy, tasty meals can be quick and easy. This dish below is proof of that.
This dish will take just 20 minutes to prepare and cook, and will serve two hungry people.
What you’ll need:
1 cup quinoa
1 zucchini
1 carrot
Handful or two of snow peas
1 cup broccoli
Handful or two of baby spinach
2 cloves garlic
1 lemon, juiced
What to do:
1. Rinse and drain your quinoa.
2. Add quinoa to a pot with two cups of water. Bring to the boil, and then reduce to simmer for about 15 minutes or until all of the water has been absorbed.
3. While that’s cooking, chop up all of your veggies.
4. Once quinoa is cooked, add all veggies except baby spinach to the pot along with garlic and lemon juice.
5. Stir veggies through, and cook on low until they are as cooked as you like them. I prefer my veggies crunchy, so I just barely gave them time to warm through.
6. At the last minute, throw in the baby spinach and give it all a stir through.
7. Serve!

Quinoa has become a staple in my diet. True Roots Quinoa is my favorite. I cook one cup quinoa to 2 cups water with a low sodium veggie cube. While it’s cooking, I saute in olive oil~chopped garlic. 1-2 lge bulbs, sometimes 3:), 2 slices of fresh ginger chopped & then add at least 3-4 stalks of kale. When its cooked to my taste, I add the quinoa and toss. Sliced Roma tomatoes on the side sprinkled with garlic flax seed & nutritional yeast…..Heaven on a plate:)

Yum! I need to start eating quinoa more. It’s one of those food items I haven’t got in the hang of eating regularly. My favourite quinoa recipe is adapted from Vij’s at Home recipe book and can be found here http://livehealthysimply.com/2012/01/happy-new-year/
I make quinoa with finely sliced red peppers, tomatoes, lots of parsley and tuna (optional). I dress it with a French type of dressing made of (hot) mustard, balsamic vinegar and olive oil. yummy!
I’m almost 20 now, and for as long as I can remember, my Mom has told my siblings and I all about Max Gerson, his studies, the amazing Gerson program, and that we can heal anything through the food we eat. I am so inspired by your story

Jessy » Thanks Jessy! That’s so cool that your Mum taught you about Gerson. We cook our veggies in a cast iron pot on a bed of tomato and onion (no water) on low for about 30-45 mins. And we bake our potatoes in the oven. Lately we’ve been waiting for our potatoes to cool down and then pouring flaxseed oil over them. Yum! x

Hi Jess, I only found out about you last week – the universe heard me! I am devouring your website and blogs now. I have been on Gerson since Jan 5th. I love I your recipes and will get cracking on some tomorrow. Couple of questions…when did you add grains such as quinoa and chick peas (you said you ate hummus) to your Gerson diet and how often do you eat them while on the therapy? Also you mentioned pouring flax oil over your potato – I do this too, but with some crushed garlic as well – but after the first couple of weeks, I thought you were limited to 1 tblsp per day. It’s not much and everything seems dry. Tam
Tamera » Hi Tamera, I’m so glad I can help you out while you’re getting started on Gerson! Congratulations for choosing this therapy. I only added quinoa recently, after my 18 month mark. Chickpeas were introduced about the nine month mark I think. All of this varies with different people. My mum is almost a year in and still isn’t having chickpeas. As for flaxseed oil, I am probably not able to advise on this. I am quite liberal with mine and have been since the start – just pouring it over and not measuring it out. All the best for the rest of your healing journey! xx
