Recipe of the week: Sara’s vegan, wheat-free pizza
One of my best friends has been staying with us all week for her annual post-Splendour festival detox and we have been cooking up a vegan, Gerson-inspired storm. Depsite the fact that almost everything we make has oatmeal in it, we have been coming up with some pretty delicious and creative stuff. Sara put her skills to the test with our limited Gerson ingredients and came up with this awesome oatmeal-based pizza, which we had for dinner last night. We were out of rye flour, and were a bit suss on how the oatmeal base would turn out, but it was surprisingly pretty good.
What you’ll need:
For the base:
2 ½ cups organic oatmeal
1 cup lukewarm water
1 tbs yeast
2 tbs coconut oil
For the pesto:
2 cups broccoli, chopped
A couple of stems fresh coriander and parsley
1/2 lemon, juice
1/2 cup roasted chickpeas, blended with a little water or crushed
2 cloves garlic
1/2 cup olive oil
2 tbsp water
For the topping:
¼ pumpkin, diced
1 zucchini, sliced
½ capsicum, sliced
2 tomatoes, sliced
1 red onion, sliced
½ cup chickpeas
What to do:
Combine all of the ingredients for the base by gradually adding water to the dry ingredients and mixing through. Once combined, cover with glad wrap and set aside the “dough” for an hour.
Spread a pizza tin with coconut oil and press out the dough into the tin. Spread a thin layer of coconut oil over the dough. Bake in an oven heated to 180°C for 40 mins.
Once you put the base in the oven, cut veggies for the topping and add to the oven. Bake for 30 mins and remove veggies and base from the oven.
While all this is cooking, combine all ingredients for the pesto in a food processor.
Once all this is done, assemble the pizza. Spread the base with the pesto, then add a layer of tomato slices. Add the rest of the vegetables and chickpeas. Add another slice of tomato to the top.
Put back in the oven and cook for a further 30 minutes before serving.
