Recipe of the week: Lima beans and zucchini hot pot
What you’ll need:
1 large onion
2 cloves garlic
½ cup soup stock (recipe here)
1 cup fresh lima beans
3 cups zucchini
4 medium tomatoes
½ tsp. cornstarch
4 sprigs fresh parsley
dash of thyme (or sage)
What to do: Mix all ingredients together in a pot except the herbs. Simmer for about 15 minutes or until tender. Thicken with cornstarch mixed with a little water. Add herbs just before serving.

Loved it, and will be making it again for sure. I didn't have lima beans, i used white beans. It's summer here in Canada, so I was able to use fresh Zucchini from the garden. Tomatoes are almost ready. Kale & Swiss Chard in the garden too for my juicing. I tried potatoes, but so far no luck.
